1 1/4 cups packed light brown sugar
1 cup granulated sugar
16 tablespoons (2 sticks) butter, at room temperature
2 teaspoons vanilla extract
2 large eggs
1 1/2 cups unsifted all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 1/2 cups old-fashioned rolled oats
1/2 cup dark seedless raisins


1. Preheat the oven to 350 degrees F. Lightly grease 2 large baking sheets.
2. In large bowl with an electric mixer beat together brown sugar, granulated sugar, butter and vanilla until fluffy. Beat in eggs. Add flour, baking soda and salt; beat until combined. Fold in rolled oats and raisins.
3. Drop dough by rounded teaspoonfuls onto greased baking sheets, about 2 inches apart. Bake 8 to 10 minutes or until golden brown. Cool on wire racks and store in airtight containers.

Substitute diced dried apricots or chocolate or butterscotch chips for the raisins, if you like.
