3 tablespoons butter
1/4 cup flour
2 cups milk
1/2 cup cubed American cheese
1/2 cup grated Parmesan cheese
1/8 teaspoon freshly ground pepper
4 cups cooked elbow or shell macaroni (from 8 ounces uncooked pasta)
1 1/2 cup cooked ham
1 cup frozen green peas, thawed


1. In medium saucepan melt butter over medium heat. Add flour and whisk briskly until bubbly. Whisk in milk and bring to a simmer, stirring constantly. Cook, stirring, until thickened.
2. Reduce heat, stir in cheeses and pepper and cook, stirring, until melted. Add macaroni, ham and peas and cook, stirring until heated through. Serve very hot.
