1 1/2 pounds boneless, skinless chicken breasts, cut into thin strips
1 clove garlic, minced
1 medium orange, sliced into rings
1 (6-ounce) package frozen snow peas
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon ginger
1 (14-ounce) can pineapple chunks, drained
2 tablespoons cornstarch
1/2 cup chicken broth, divided
1 (11-ounce) can mandarin orange slices, drained

1. Preheat heavy skillet on medium high temperature for about 3 minutes; spray with cooking spray. Add chicken garlic and stir fry about 3 minutes. Increase temperature to high and add snow peas, stir frying about 3 minutes.
2. Add salt, pepper, ginger and pineapple, continuing to stir fry about 3 minutes more.
3. In small bowl, mix cornstarch with 2 tablespoons of the chicken broth, stirring until smooth. Slowly stir in remaining broth and then add to mixture in skillet, stirring gently to mix evenly. Add mandarin oranges and heat only until heated through, about 2 minutes, stirring gently to keep orange sections from breaking. Serve over rice or with wide Oriental noodles.
Cornstarch is a flour that comes from corn kernels and is used as a thickening agent. Due to its tendency to form lumps it is usually mixed with a small amount of cold liquid before being stirred into a hot dish. In the following recipe, you can mix the cornstarch with either the orange syrup or lemon juice before stirring it into the pan.
