4 ripe bananas, peeled and cut into 1/2-inch-thick slices
1 tablespoon lemon juice
2 tablespoons butter
1 tablespoon packed light brown sugar
3 tablespoons fresh orange juice
Grated peel of 1 orange


In a medium bowl, toss bananas with lemon juice. In a large skillet over medium heat, melt butter; stir in brown sugar. When mixture bubbles, stir in bananas, orange juice and orange peel. Cook bananas, stirring frequently, for about 2 to 3 minutes, or until softened and glazed. Do not overcook.

This recipe originally called for red-skinned bananas, which have creamier flesh than common yellow bananas, but use any type of bananas you have. Serve over waffles at breakfast or over ice cream or pound cake for dessert.
