2 dozen littleneck clams, scrubbed
4 tablespoons (1/2 stick) butter, melted
1/4 teaspoon grated lime peel
2 tablespoons lime juice


1. Preheat oven to 350 degrees F. Wash clams thoroughly under cold running water. Place on a baking sheet and roast on center rack about 10 to 12 minutes or until clams open. Discard any clams that don't open.
2. Meanwhile, in small bowl combine melted butter, lime peel and lime juice. Drizzle some lime butter over hot clams and pass the remainder.

In this recipe, we recommend 1 dozen clams per appetizer serving. You may increase or decrease the serving size without altering the roasting instructions.
