Ingredients

1 1/3 pounds fresh asparagus, trimmed
1/3 cup extra-virgin olive oil
Coarse salt to and freshly ground black pepper to taste

Directions

1. Preheat oven to 450 degrees F. Line a baking with foil or parchment paper.
2. Arrange asparagus on prepared baking sheet; drizzle olive oil over, and sprinkle with salt and pepper to taste. Roast 6 minutes, remove and cool to room temperature before serving.

This recipe is from Richard Winters, a contestant on the 2000 Southwest Regional Cookoff segment of the PBS series Master Chef. Roasting asparagus concentrates the flavor while leaving the stalks perfectly crisp-tender. Winters serves the asparagus at room temperature, but you can eat them hot from the oven, too.
