1/3 cup cider vinegar
3 tablespoons sugar
Salt and freshly ground black pepper to taste
1 small head cabbage, thinly sliced (about 4 cups)
1 red bell pepper, chopped
1 yellow bell pepper, chopped
4 green onions, thinly sliced


In a large bowl, combine vinegar, sugar, and salt and black pepper to taste. Add cabbage, peppers, and green onions; toss until vegetables are thoroughly coated with dressing. Cover and chill the slaw at least an hour before serving.

The old-fashioned flavor of this colorful side dish makes it a good partner to any meat or fish main dish.
