3 tablespoons olive oil, divided
12 ounces pork tenderloin
8 teaspoons pepper seasoning blend mix, divided
8 ounces fresh whole white mushrooms, halved if large (about 3 cups)
8 ounces new potatoes, halved or quartered (about 3 cups)
1 large red bell pepper, cut in 1-inch chunks (about 1 1/2 cups)
1 medium onion, cut in 8 wedges
3 tablespoons olive oil, divided


1. Preheat oven to 450 degrees F. Grease a 15 X 12-inch roasting pan with 1 tablespoon. of the oil. Rub pork with 2 teaspoons of the pepper seasoning blend; place in prepared pan.
2. In a large bowl, toss mushrooms, potatoes, bell pepper and onion with remaining oil and pepper seasoning blend; add to roasting pan in a single layer. Roast, uncovered, stirring vegetables occasionally, until a meat thermometer inserted in the pork registers 160 degrees F and the vegetables are tender, about 20 minutes. Cut pork into thin slices. Serve immediately.
Depending on which brand you purchase, you may need to add less of the pepper seasoning mix. Let your taste guide you.
