2 tablespoons olive oil, divided
1 pound sweet Italian sausage, removed from casing
4 medium portabella mushrooms, stems removed, sliced
salt and pepper to taste
1 cup marinara sauce
1 cup grated mozzarella cheese
1/4 teaspoon crushed red pepper flakes
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh parsley
1 12-inch prebaked pizza crust


1. Preheat oven to 450 degrees F. In a large skillet over medim-high heat, heat 1 tablespoon of the olive oil; saute sausage using the back of a spoon to break up the sausage. Cook until brown and heated through, about 6 minutes. Remove sausage from the pan, drain on paper towels.
2. Add portabellas to the skillet. Saute over medium heat for about 4 minutes until mushrooms are softened, season with salt and pepper.
3. Brush pizza crust with remaining olive oil. Spread marinara sauce over the pizza crust. Sprinkle 3/4 cup mozzarella on top of the sauce followed by portabellas and sausage. Sprinkle remaining 1/4 cup of mozzarella, crushed red pepper, rosemary and parsley over the pizza. Bake pizza for 10-12 minutes until the cheese is melted and bubbly and the crust is crisp.
Additional toppings can be added or substituted on this pizza to suit your taste. Try it with roasted red peppers, pitted black olives or artichoke hearts.
