4 new white potatoes
4 tablespoons olive oil
1/2 teaspoon salt
1/8 teaspoon pepper
4 garlic cloves, chopped
2 tablespoon chopped fresh parsley
1 - 1/2 tablespoons butter

1. Cut the potatoes in half lengthwise, and then cut them in thin slices about as thin as a quarter.

2. Heat the oil in a 12 inch nonstick pan set on high heat until sizzling, about 2 minutes. Add the potato slices and cook for 8 minutes, stirring every 2 minutes to ensure that they brown evenly without sticking or burning. Be very careful not to burn the potatoes during this stage. Reduce the heat to medium. Add 1/8 teaspoon of the salt and the pepper and cook 10 more minutes, stirring occasionally. Add the remaining salt, the garlic and parsley and cook for 5 minutes. Add the butter and cook for 5 minutes, serve.

While cooking the potatoes, don't worry if some of them stick together. That is the way they are suppose to be writes Nick Stellino.
