1 cup peeled pearl onions, halved
1 cup chopped yellow onions
6 shallots, peeled and thinly sliced
1 clove elephant garlic or 2 cloves regular garlic, peeled and finely minced
1 cup beef or chicken broth
2 tablespoons chopped fresh parsley
1/4 teaspoon ground black pepper
Salt to taste
1 1/2 pounds Yellow Finnish, Yukon Gold or purple potatoes, sliced 1/4 inch thick


1. In a medium saucepan, place pearl onions, onions, shallots, garlic and broth. Bring to a boil; reduce heat to simmer. Cover and simmer 5 minutes or until vegetables are very tender.
2. Uncover and simmer 5 to 10 minutes or until nearly all liquid has evaporated. Stir in parsley, pepper and salt; set aside.
3. Cook potatoes in boiling water to cover for 10 to 15 minutes or until tender; drain well. Serve hot with relish.
