1 pound boneless beef top round or top sirloin, cut 3/4 inch thick
2 tablespoons fresh lime juice
2 teaspoons vegetable oil
2 large cloves garlic, minced
8 small flour tortillas, warmed
Salt and pepper to taste
Pico De Gallo:
1 cup seeded, chopped tomato
1/2 cup diced zucchini
1/4 cup chopped fresh cilantro
1/4 cup prepared salsa
1 tablespoon fresh lime juice


1. Prepare Fajitas: Place steak in a self-sealing plastic bag; add lime juice, oil, garlic and salt and pepper; turn to coat. Close bag securely and marinate in refrigerator 20 to 30 minutes, turning once.
2. Prepare Pico De Gallo: Meanwhile in a medium bowl, combine tomato, zucchini, cilantro, salsa and lime juice; mix well.
3. Preheat broiler. Remove steak from marinade; discard marinade. Place steak on rack in broiler pan so surface of meat is 2 to 3 inches from heat. Broil 12 to 13 minutes for medium-rare to medium doneness, turning occasionally. Let rest for 5 to 10 minutes before slicing.
4. Trim fat from steak; cut against the grain into very thin slices. Serve beef in tortillas with Pico de Gallo.
Try adding a can of corn and a can of diced tomatoes to thicken your salsa. The steak can also be cooked on an outdoor grill.
