6 potatoes (about 2 pounds)
2 large sweet onions
3/4 cup canned chicken broth
2 teaspoons dried tarragon
Salt & pepper to taste


1. Preheat oven to 450? F.
2. Cut potatoes and onions into 8 wedges each. Spread evenly in a 1/2-inch deep baking pan. Add chicken broth, tarragon, salt & pepper. Roast in oven for 20 minutes.

Nothing could be simpler than this side dish which goes well with just about anything.
