6 ounces rattlesnake beans
6 slices bacon, chopped
1 cup chopped onion
2 cloves garlic, minced
2 cups chicken broth or water
1 tablespoon chopped fresh sage, basil, or oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper


1. In a medium saucepan, cover beans with water; bring to a boil. Boil 2 minutes; remove from heat. Cover and let stand 1 hour. Drain; set aside.
2. In a 3-quart saucepan or deep skillet, cook bacon with onion and garlic until bacon is crisp; drain off fat.
3. Add broth, drained beans and herbs; bring to a boil. Reduce heat; simmer, covered, for 30 to 40 minutes, or until beans are tender. Drain off any excess liquid; stir in salt and pepper.

This member of the kidney bean family is named after the rattlesnake because of the way the bean pod coils around the vine as it grows. This recipe could also be prepared with kidney beans. Serve as a side dish to pork chops.
