2/3 cup mayonnaise
5 cloves garlic, minced
1 tablespoon chopped fresh chives
8 slices sourdough bread, toasted
1 head radicchio
1 pound sliced roast beef
6 ounces sliced sharp cheddar cheese


1. For garlic mayonnaise, in a small bowl, stir together the mayonnaise, garlic and chives. Arrange bread slices on a flat surface. Spread mayonnaise mixture over each bread slice. Wash and core radicchio; separate leaves.
2. Arrange a generous layer of radicchio leaves on half of the bread slices. Top with roast beef and cheese. Add another layer of radicchio leaves. Top with remaining bread slices, mayonnaise side down. Cut each sandwich in half diagonally. Serve, or wrap and refrigerate to serve within 24 hours.

The amount of garlic called for here will give a very strong garlic flavor. Use less for a milder taste.
