1 pound new potatoes, scrubbed
2 tablespoons nonfat mayonnaise
2 tablespoons chopped green onions
2 tablespoons grated Parmesan cheese, divided
Salt and pepper to taste


1. Preheat oven to 350 degrees F. Place potatoes on a baking sheet and bake until tender, about 30 minutes. Cool slightly.
2. In a small bowl, combine mayonnaise, green onions and 1 tablespoon of the Parmesan cheese; season with salt and pepper.
3. Cut ends off of potatoes to allow them to stand up. Place potatoes on a baking sheet, scoop out small portion from top of potato and fill with mayonnaise mixture. Sprinkle with remaining Parmesan cheese. Return to oven and bake until cheese browns, about 5 minutes.

Serve as a side dish to roast chicken or turkey. Sprinkle with chopped parsley before serving, if desired.
