1 3 to 4 pound winter squash, seeded and cut into serving-size wedges (such as Australian Blue, Acorn, Buttercup, Kabocha, or Butternut)
2 tablespoons butter, melted
2 teaspoons chopped fresh basil
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh dill
Salt and pepper to taste
1/3 cup crumbled blue cheese


1. Preheat oven to 375 degrees F. Arrange squash pieces cut side up in a shallow baking dish. In a small bowl, stir together melted butter, basil, thyme and dill. Brush mixture over squash; season squash with salt and pepper.
2. Cover and bake for 35 to 45 minutes or until fork-tender. Uncover; sprinkle with blue cheese. Return to oven until cheese melts. Serve immediately.
