2 pints strawberries, hulled and quartered
3 cinnamon sticks
� cup dark brown sugar
2 tablespoons unsalted butter
1 tablespoon balsamic vinegar


Preheat oven to 450 degrees F. Combine strawberries, cinnamon sticks, brown sugar, butter and balsamic vinegar in baking dish. Bake, uncovered, stirring occasionally, until berries have softened and sauce is slightly reduced, 6-10 minutes. Remove cinnamon sticks and serve warm.

Joe Simone notes that Italians drizzle balsamic vinegar over fresh fruit for a quick and delicious dessert. This recipe takes the practice one step further, and is delicious on its own or spooned over angel food cake or ice cream. It’s also a good way to use less-than-perfect strawberries; in fact, Joe likes to use a mix of ripe and slightly underripe berries for the dish. He also prefers a good quality balsamic to the mass produced commercial brands.
