2 peaches or mangos, diced
1 large tomato, seeded diced
4 scallions, chopped
2 tablespoons chopped cilantro
2 teaspoons minced ginger, or 1/2 teaspoon ground ginger
1 tablespoon balsamic vinegar
Vegetable spray
Juice of 1 lemon
4 salmon steaks, 6 ounces each


1. Heat grill.
2. In bowl, combine first six ingredients to make salsa. Set aside.
3. Spray grill with vegetable spray. Sprinkle lemon juice over salmon. Grill salmon steaks 5 - 6 minutes on each side. Remove salmon from grill and top each steak with salsa.

This meal is prepared in under 20 minutes. Serve with cooked basmati rice on the side.
