1/2 cup rye flakes
1/4 cup apple juice
1 pound lean ground beef
1 small onion, finely chopped
2 tablespoons chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon vegetable oil
1 (15-ounce) can sauerkraut, drained and rinsed
1 large Golden Delicious apple, chopped
1/4 teaspoon caraway seeds, optional
Dijon mustard


1. In medium bowl, combine rye flakes and apple juice; set aside 10 minutes.
2. Add ground beef, onion, parsley, salt and pepper to rye and form mixture into 4 patties.
3. In large skillet heat vegetable oil over medium heat. Sautee burgers until lightly browned on both sides and cooked through, 5 or 6 minutes on each side. Remove and keep warm.
4. Add sauerkraut, apple and caraway seeds, if using, to skillet; cover and cook, stirring occasionally, 5 to 7 minutes or until sauerkraut is hot through and apples are tender.
5. To serve, divide sauerkraut mixture among plates; place a burger on top of each. If desired, top each with a dollop of mustard. Or, serve burgers on buns and top with sauerkraut and mustard.
