2 teaspoons olive oil
1 recipe pizza dough (see link)
1 small white onion, thinly sliced
2 cups hot water
1 recipe pizza sauce (see link)
4 tablespoons freshly grated Pecorino Romano cheese
4 tablespoons Italian bread crumbs (see link)


1. Grease a 9 x 13 x 2-inch rectangular glass baking dish with the olive oil. Stretch the pizza dough (which has risen for 1 hour) to fit the pan. Cover the pan and let the dough rise for 1 hour.
2. While the pizza dough is rising, soak the onions for 1 hour in the hot water to reduce the pungency of the onions. Drain well and pat dry with a towel.
3. Preheat the oven to 400 degrees F. Top the raised pizza dough with 1/2 of the pizza sauce, spreading it over the entire crust. Top with the drained onion, the remaining pizza sauce, the cheese and bread crumbs. Bake for 45 minutes. Remove the pizza from the oven and let it rest for 10 minutes, Cut into 4 pieces and serve on warm plates.
