2 tablespoons peanut oil
1 pound broccoli, cut in florets
1 tablespoon water
12 ounces fresh shiitake mushrooms, stems removed, sliced
2 medium sliced green onions
1/4 teaspoon ground nutmeg
1/4 cup roasted cashews
salt and pepper to taste


1. In a large skillet or wok over high heat, heat oil, add broccoli. Stir-fry for 1 minute. Add water and cook, stirring until broccoli is crisp-tender, about 5 minutes. Remove broccoli and set aside.
2. To skillet, add mushrooms, green onions and nutmeg. Stir-fry until juices evaporate, about 3 minutes. Return broccoli to skillet, add cashews. Season with salt and pepper.
Serve over rice as a vegetarian main dish or as a side dish.
