1 small jalapeno, minced
1 tablespoon vegetable oil
1 tablespoon lime juice
1 tablespoon minced gingerroot
1 tablespoon chopped cilantro
1 tablespoon soy sauce
1 teaspoon salt
1 teaspoon minced garlic
1 pound large shrimp, peeled and deveined, tails on


1. Prepare outdoor grill, placing grill rack 5 inches from heat, or preheat broiler. In a large bowl, combine all ingredients except shrimp. Add shrimp, turning to coat shrimp with marinade. Cover and refrigerate at least 30 minutes or up to 2 hours.
2. Thread 2 shrimp on each skewer. Grill or broil until shrimp are opaque, about 2 minutes per side.

If using wooden skewers, soak them in water for 20 minutes or so before skewering the shrimp, to avoid flameups on the grill or broiler.
