Ingredients

1 recipe Nick Malgieri's Pasta Frolla
The Filling:
1 ? cups unblanched almonds
? cup honey
? teaspoon cinnamon
For Finishing
Honey
Toasted sliced almonds

Directions

1. Prepare and chill the pasta frolla dough.
2. Set racks in the upper and lower thirds of the oven and preheat to 350F. Line 2 baking sheets with foil or parchment.
3. Prepare the filling: Grind the almonds in a food processor. Add the honey and cinnamon. If the mixture is very firm, add a tablespoon of water.
4. Divide the pasta frolla dough into 2 parts and roll each into a 12 inch square. Cut the dough into 8 strips, each 1 ? x 12 inches. Spread the filling down the center of each strip, then fold the strip up to contain the filling. Cut into 4 inch lengths and twist once or twice. Repeat with the second piece of dough. Bake the cookies until they are pale and golden, about 12 – 15 minutes. Before serving, drizzle with the honey and sprinkle with the almonds.

This is Nick Malgieri's recipe for a Sicilian Christmas specialty. When baking them, remember to alternate the pans from one rack to the other so the ones on the bottom are not overcooked.
