2 tablespoons butter
6 smoked pork loin chops, 3/4-inch thick
2 cups cooked mashed sweet potatoes
1 (8-ounce) can crushed pineapple, drained, liquid reserved
3 tablespoons maple syrup
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1/3 cup walnut pieces, coarsely chopped


1. Preheat oven to 350 degrees F. In a large skillet over medium heat, melt butter and brown chops on one side. Place chops, browned side up, in a 13 x 9-inch baking pan.
2. In a large bowl, combine sweet potatoes, pineapple, maple syrup, cinnamon and salt; mix well. Spoon mixture over chops. Sprinkle with walnuts. Pour pineapple liquid into pan. Bake uncovered for about 30 minutes or until pork is heated through and pineapple sauce is bubbly.

This hearty dish is not only simple to pull together, but special enough for company. The flavors suit autumn and winter appetites. Serve with hot corn muffins.
