Ingredients

1/2 cup olive oil
3 tablespoons balsamic or red-wine vinegar
1 pound smoked venison, thinly sliced
1 pound mixed salad greens
2 cups sliced fruit, a mix of persimmons, tangerines and oranges
6 ounces crumbled gorgonzola or other blue cheese
3 ounces green beans, blanched and cooled
1/2 cup pecan halves
Salt and pepper to taste

Directions

1. In a small bowl, whisk together oil and vinegar. Season with salt and pepper, set aside.
2. In a large bowl, combine salad greens, fruit, gorgonzola, green beans and pecan halves. Place on individual salad plates, drizzle with dressing and serve.

You could also make this salad with leftover roast venison or smoked chicken or turkey.
