1 tablespoon olive oil
8 ounces smoked sausage, diced
3 cups peeled and diced sweet potatoes
1/2 cup diced onion
1/2 cup diced celery
1 tablespoon minced jalapeno
2 tablespoons flour
3 cups chicken stock
1/4 teaspoon ground black pepper
1/4 teaspoon salt
sliced green onions for garnish, optional
1. In a large saucepan over medium heat, add olive oil. Cook sausage until browned, about 5 minutes.
2. Add sweet potatoes, onion, celery and jalapeno; cook until vegetables are slightly softened, about 5 minutes. Add flour, stirring to coat vegetables with flour; cook for 2 minutes longer. Add stock, season with salt and pepper.
3. Simmer for about 20 minutes or until sweet potatoes are cooked through, stirring occasionally. Garnish with green onions, if desired.
This soup is hearty enough to be a main dish. Add salad and bread for a complete meal.
