2 bunches dandelion greens
2 tablespoons olive oil
1/4 cup chicken or beef broth
1 tablespoon chopped fresh basil
Salt and pepper to taste


1. Trim off bottom third of stems and discard; wash remaining leaves well. Chop into bite-sized pieces.
2. In a large skillet over medium heat, heat oil. Add chopped greens, broth and basil. Cover and cook until tender, about 10 to 15 minutes. Add salt and pepper to taste.

Dandelion greens have a sharp flavor similar to mustard greens or collard greens. Serve this as a side dish to ham or roast pork.
