1 1/2 gallons water
1 stalk celery with leaves, thinly sliced
1 teaspoon salt
4 (1 1/2-pound) lobsters
Melted butter
Lemon wedges


1. Bring water, celery and salt to a boil in a very large lobster pot. Add live lobsters; cover and cook over high heat 12 to 15 minutes or until shells have turned bright red. Remove and drain well.
2. To serve, turn lobsters upside down and make a lengthwise cut through tail shell. Serve with melted butter and lemon wedges. Provide lobster crackers and mallets to make it easier to get to the meat.

Cooking lobsters is a very simple operation; selecting them is where the important decisions are made. Lobsters should be very active and heavy for their size. If held in lobster tanks for very long they lose weight and the meat will be tough and dry.
