1 package (3.4-ounces) instant vanilla pudding mix
2 cups nonfat milk
1/4 teaspoon almond extract (optional)
4 cups strawberries, stemmed and sliced
2 tablespoons sugar (or to taste)
1 1/2 cups amaretti (almond cookie) crumbs
Mint sprigs


1. In a medium bowl, whisk together pudding mix, milk and extract, if desired; cover and refrigerate.
2. In a bowl, combine strawberries and sugar; spoon about 3 tablespoons in each of six stemmed glasses. Layer with 3 tablespoons cookie crumbs and 1/3 cup pudding. Top with the remaining strawberries and crumbs, dividing equally. Garnish with mint sprigs.

Serve this quick, light dessert, presented elegantly in a wine glass, at your next dinner party.
