2 cups sliced strawberries
2 tablespoons chopped fresh basil
2 tablespoons raspberry vinegar
1/2 teaspoon sugar
1 teaspoon olive oil
1 teaspoon water
4 cups mixed salad greens
1 ounce crumbled Stilton or other blue cheese
French bread, optional


1. In a medium bowl, combine strawberries, basil, vinegar and sugar; toss well to coat. With plastic wrap and chill 1 hour. Strain mixture through a sieve into a jar, reserving liquid. Set aside strawberries.
2. Add oil and water to reserved liquid . Cover tightly, and shake vigorously.
3. To serve, divide greens among 4 salad plates. Top with 1/2 cup berries, 2 teaspoons dressing and 1 tablespoon of cheese. Serve with French Bread, if desired.

Select strawberries that are in season, ripe, and at the peak of freshness to achieve the sweetest flavor. Serve as an appetizer or a refreshing side dish. Stilton is a mild blue cheese from England that is delicious with fruit.
