1 1/4 pounds strawberries, stemmed, frozen overnight
1 tablespoon lemon juice
1/2 cup fruit juice concentrate or 1/4 cup honey


1. Place frozen strawberries in a colander and strain into a bowl. In a small saucepan over medium-high heat, bring juice to a boil; reduce to 1/4 cup. Remove from heat. Stir in the lemon juice and fruit concentrate or honey.
2. In a blender, puree juice mixture with strawberries until smooth. Serve immediately or refrigerate up to 2 weeks.

This is a simple method for concentrating strawberry flavor. Serve over ice cream, waffles, yogurt or fresh strawberries.
