2 cups strawberries, stemmed and halved, divided
1 teaspoon finely chopped fresh mint, or 1/2 teaspoon dried mint
1/2 teaspoon honey
1/2 cup light sour cream
Lettuce leaves
2 cups fresh fruit, such as blueberries, raspberries, peaches, plums, melon or kiwi


1. Prepare dressing: In a blender, blend 1/2 cup strawberries. Spoon sour cream into a medium bowl. Stir in strawberry pur´┐Że, mint and honey.
2. Assemble salad: Line 4 salad plates with lettuce. Arrange remaining strawberries and other fruit on lettuce. Pour dressing over salad and serve.
