1/4 cup sugar
2 tablespoons cornstarch
2 tablespoons water
1 cup pureed strawberries
1 (8-ounce) package light cream cheese
1 tablespoon grated orange peel
1/4 cup orange juice
1/2 cup confectioners sugar
1 10-inch prebaked tart shell
2 pints strawberries, sliced


1. In a small saucepan, combine sugar and cornstarch. Blend in water and pureed strawberries. Cook and stir over medium heat until mixture thickens and bubbles. Strain mixture and cool at room temperature. Set aside.
2. Using an electric mixer, beat cream cheese, orange peel, orange juice and powdered sugar until creamy. Spread mixture in prepared 10 tart shell, top with sliced berries and brush with glaze.

To prebake the crust, fit a purchased or homemade crust in a 10-inch fluted tart pan. Line with foil and fill with pie weights or beans. Bake at 400 degrees F for about 15 minutes, remove the foil and beans and bake another 5 minutes to 10 minutes, until golden.
