1 pound malanga
3/4 cup packed light brown sugar
1 teaspoon ground allspice
1/4 cup melted butter
Salt and pepper to taste
1/2 cup boiling water


1. Preheat oven to 375 degrees F. Peel malanga and place in a medium saucepan with water to cover; simmer about 10 minutes or until slightly softened, do not cook through.
2. Drain, slice in 1/4-inch-thick slices. Arrange slices a casserole dish. sprinkle with brown sugar and allspice. Pour butter over top, season with salt and pepper, then add 1/2 cup boiling water. Cover and bake about 30 minutes; uncover and bake another 15 minutes or until malanga is very tender.

Malanga, also known as yautia, is a starchy tuber found in Latin markets. It has a brown exterior with creamy white or yellow flesh. Serve this casserole as a side dish to roast pork or chicken.
