1 bulb kohlrabi
2 apples
3 tablespoons extra virgin olive oil
1/4 cup fresh mint
1 teaspoon sea salt
1 tablespoon fresh ground black pepper


To make this easy and healthy kohlrabi slaw, start with a kohlrabi bulb and 2 fresh medium sized apples.  Use a firm, tart apple, such as a Granny Smith.  

Julienne the kohlrabi and the apples, then chop the fresh mint.  Combine all of the ingredients in a bowl.  Mix thoroughly.  Adjust salt and pepper to taste.

This serves 4 people as a small side.  

We suggest you use a nice olive oil as it is critical taste element here.
