2 pounds fillets, cut into serving-size pieces
1 teaspoon salt
1 cup Thousand Island salad dressing
1 1/2 cups crushed cheese snack crackers
2 tablespoons canola or vegetable oil
1/4 teaspoon


1. Preheat oven to 500 degrees F. Season fillets with salt. Dip fillets in salad dressing and dredge in cracker crumbs. Place on a well-oiled baking sheet.
2. Drizzle fillets with oil and sprinkle lightly with paprika. Bake for 10 minutes per inch of thickness or until fish flakes easily and is no longer translucent in the center.

Use a mild white fish fillet, such as snapper or sole for this dish. Have your fishmonger remove the skin.
