2 tablespoons butter
4 ounces fresh mushrooms, chopped (about 1 1/4 cups)
4 ounces grated sharp Cheddar cheese
1 large egg, lightly beaten
1/2 teaspoon salt
12 slices white bread
12 1/2-inch-thick slices tomato
6 strips bacon, halved


1. Preheat broiler. In a medium skillet, melt butter; add mushrooms and cook until golden, about 3 to 5 minutes. Remove pan from heat. Stir in cheese, egg and salt, set aside.
2. Using a 2-inch round cookie cutter cut bread into circles. Place a tomato slice on each bread circle. Spread mushroom-cheese mixture over tomatoes. Top each sandwich with a piece of bacon. Arrange sandwiches on broiler pan. Broil 4 to 6 inches from heat until bacon is crisp and cheese is melted and bubbly.
Serve these open-face sandwiches with tomato soup for a comforting winter lunch.
