Ingredients

1/4 cup chunky peanut butter
3 tablespoons apple juice
1 tablespoon soy sauce
1 1/2 teaspoons Dijon-style mustard
1 teaspoon minced garlic
1 teaspoon fresh lemon juice
1/2 teaspoon hot pepper sauce
2 cups cooked chopped turkey meat
1 cup shredded romaine lettuce
1 tomato, seeded and diced
1 cup peeled, seeded and diced cucumber
1/4 cup chopped onion
4 whole-wheat pita bread, cut in half

Directions

1. In a small bowl, combine peanut butter, apple juice, soy sauce, mustard, garlic, lemon juice and hot pepper sauce; set aside.
2. In a medium bowl combine turkey, lettuce, tomato, cucumber and onion. Fold in peanut butter mixture. Cover and refrigerate 30 minutes or until chilled. To serve, spoon 1/2 cup turkey mixture into each pita half
