1 1/2 cups guacamole
16 slices whole wheat bread
2 medium tomatoes, sliced
8 cups shredded iceberg lettuce
12 ounces sliced smoked turkey breast
8 slices reduced-fat Cheddar cheese
8 tablespoons sweet hot mustard
1. Spread 3 tablespoons guacamole on 8 slices of bread. Arrange in a layer 2 tomato slices, 1 cup lettuce, 2 slices turkey and 1 slice Cheddar over top of guacamole on each bread slice.
2. Spread 1 tablespoon mustard over each remaining slice of bread and place on top of each sandwich. To serve, slice each sandwich in half.
