1/4 cup vegetable oil
1/4 cup fresh lime juice
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1 1/2 pounds skinless, boneless turkey breast or thigh, cut into 1 inch pieces
2 medium zucchini, cut in 1 inch chunks
2 medium red bell peppers, seeded and cut in 1 inch chunks
2 medium red onions, cut in 1 inch chunks


1. Prepare outdoor grill, placing grill rack 5 inches from heat source. In a large bowl, combine oil, lime juice, chili powder, garlic powder and salt. Toss turkey and vegetables in oil mixture to coat. Marinate in refrigerator for about 1 hour.
2. Thread turkey and vegetables onto skewers, alternating turkey and vegetables. Place skewers on grill rack, grill over medium heat for about 10 minutes, turning occasionally, or until turkey is cooked through.

If using wooden skewers, soak them in water for about 20 minutes before adding the ingredients. The kebabs could also be cooked in a broiler or grillpan. Cooking time will remain about the same.
