2 tablespoons vegetable oil
1 medium onion, chopped
1 red bell pepper, diced
1 green bell pepper, diced
1 cup sliced fresh white mushrooms
1 tablespoon chopped garlic
1 cup canned diced tomatoes with juices
1/2 cup ketchup
2 tablespoons Worcestershire sauce
2 tablespoons tomato paste
Salt and pepper to taste
1 pound ground meat substitute
1. In a large skillet over medium heat, heat oil. Add onion, peppers and garlic, cook until crisp-tender, about 3 minutes. Add mushrooms and cook until they release their liquid, about 2 minutes.
2. Add diced tomatoes and juice, bring to a simmer, cook uncovered for 5 minutes. Add ketchup, Worcestershire and tomato paste, season with salt and pepper. Simmer until thickened, about 10 minutes.
3. Add ground meat substitute, stir and simmer to heat through.

Serve these meatless sloppy joes on toasted, seeded rolls. Ground meat substitute can be found in the freezer section of health food stores and some large grocery stores.
