2 tablespoons olive oil
1 small red bell pepper, sliced
1 small green bell pepper, sliced
1 small onion, sliced
4 prepared veggie burger patties, cooked and sliced into strips
1/2 cup tomato sauce
1/2 cup chopped fresh parsley
Salt and pepper to taste
8 fajita-size flour tortillas
1 cup shredded Cheddar cheese


1. In a skillet over medium heat, add oil, green and red peppers and onion; cook until crisp-tender, about 5 minutes.
2. Add veggie burger slices and tomato sauce. Bring to a simmer and cook until heated through; stir in parsley and season with salt and pepper.
3. Spoon equal amounts of mixture in each torilla, top with Cheddar and roll up; serve immediately.

Warm the tortillas in a microwave or low oven before assembling the fajitas. Serve sour cream and guacamole on the side.
