2 quarts Washington Red Delicious apples, cored and diced
1 cup pineapple juice
3 quarts brown or white rice, cooked and cooled
4 cups celery, chopped
4 cups walnuts, coarsely chopped
3 cups golden raisins
1 1/2 cups carrots, finely chopped
3 cups low-fat vanilla or plain yogurt
1 1/2 cups low-fat mayonnaise
1 tablespoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground coriander


1. In large bowl, toss apples with pineapple juice; drain if necessary. Stir in rice, celery, walnuts, raisins and carrots.
2. In separate bowl, blend yogurt, mayonnaise, salt, cinnamon and coriander.
3. Stir dressing into apple mixture. Cover and refrigerate until service.

The original Waldorf salad, created in the 1890s at the Waldorf-Astoria Hotel in New York, consisted of only apples, celery and mayonnaise, with walnuts following soon after.
