Ingredients

Chicken:
4 boneless, skinless chicken breasts
l 1/2 cups unsweetened apple juice
3 cups cooked wild rice
l 1/2 cups seedless green grapes, halved
l cup chopped apple
3/4 cup slivered almonds, divided
1/2 cup chopped celery
1/2 cup chopped water chestnuts
Dressing:
1 cup mayonnaise
1/2 teaspoon seasoned salt
1/4 teaspoon cinnamon
spinach leaves

Directions

1. In deep saucepan, place chicken and apple juice and cook over medium heat until fork can be inserted in chicken with ease, about 15 minutes. Remove chicken from pan, dice and chill. 2. Meanwhile, prepare Dressing: In small bowl, combine mayonnaise, seasoned salt and cinnamon. 3. In large bowl, gently toss together chicken, rice, grapes, apple, 1/2 cup of the slivered almonds, celery and water chestnuts. Add Dressing and toss lightly. Cover and chill about 30 minutes to blend flavors. 4. To serve, place spinach leaves on platter; spoon on chicken mixture and sprinkle with remaining 1/4 cup slivered almonds.
Wild rice isn't actually a variety of rice. Instead, it is actually a long grain marsh grass. Wild rice is expensive and takes up to an hour to cook. Be careful not to overcook wild rice as it will become increasingly starchy.
