2 tablespoons peanut or vegetable oil
1 bunch yow choy sum, sliced into 1/2 inch pieces
1 (8-ounce) can water chestnuts, drained and chopped
1/3 cup sliced almonds
1 tablespoon minced fresh ginger
1 tablespoon lemon juice
1/4 teaspoon ground black pepper
Salt to taste


1. In a large skillet over high heat, heat oil; add yow choy sum pieces. Stir-fry for about 5 to 6 minutes or until nearly tender.
2. Stir in water chestnuts, almonds, ginger, lemon juice, and pepper. Cook and stir about 2 minutes more or until heated through. Season with salt and pepper.

Yow choy sum is a leafy Chinese vegetable. It's available in Asian markets, but if you can't find it, substitute broccoli rabe or collard greens.
